Ingredients:
.5 oz Kabosu
.5 oz Ginger Juice
1oz Fig Syrup*
Preparation:

Mix together all ingredients in a cocktail shaker.

Shake and strain into a Collins glass over a tall ice cube or ice.

Top with club soda.
Spiced Apple Cider
Ingredients:
4 parts apple cider
1 part lemon juice
1 part orange juice
1 part honey cinnamon syrup**
Preparation:

Mix all ingredients together.

Serve over ice with star anise and apple peel twist.

* Fig Syrup
Ingredients:
300 g cut sliced dried figs
800 mL water
300 g demerara sugar
300 g white sugar
20 mL vanilla extract
30 mL lemon juice
Preparation:
1. Add all ingredients together in a saucepan on medium heat until sugars have dissolved.
2. Let simmer for 15 minutes, then take off heat and bring to room temperature.
3. Transfer to mason jar and let sit for 24 hours.
4. Strain the syrup through a fine cheesecloth to remove all the figs. Store in refrigerator.
** Honey Cinnamon Syrup
Ingredients:
500 mL water
250 mL honey
125 g cinnamon
Preparation:
1. Add water and cinnamon to a small saucepan.
2. Bring to a gentle boil, then reduce heat and simmer slowly until the water evaporates to 1/2 cup.
3. Remove from heat, add honey, and stir until dissolved.
4. Cool the mixture until room temperature.
5. Strain the syrup through a fine cheesecloth and sieve to remove all the cinnamon. Store in refrigerator.
